牛仔骨也叫牛小排、牛肋排,就是牛的胸肋骨,肉质肥腴有筋腱,多汁耐嚼,带骨一起煎的话,更香。 但要明确的是,带骨头的在北美的分割标准中,统称为牛仔骨;不带骨头的,统称为牛小排。所以,牛小排的价格通常高于牛仔骨。 国内市面上所卖的牛仔骨一般是分成三、四根肋骨一块一块的真空包装,长约22厘米左右,肉宽在3--6厘米之间,商家会根据酒楼需要,用切割机将其切割为0.8--1厘米厚的片,冷冻保藏。
