我们的非遗剁椒 泡鸭掌选用赣南本地优质小米辣椒为原材料,采用非物质文化遗产“小米椒辣酱制作技艺”是传统古法与现代科技融合工艺精心腌制而成,被收录为非物质文化遗产产品。双重发酵150天,0添加防腐剂、配料表只有:小米辣、食用盐、大蒜。我们的鸭爪是采用9°酿造米醋结合0-6度环境下低温冷泡48小时,结合我们的剁椒鸭爪滚揉而成,形成这道有记忆的客家味道。
Product Introduction
Our Intangible Cultural Heritage Chopped Chili Pickled Duck Feet
are made with premium local Gannan millet peppers,
using the time-honored Millet Chili Sauce Making Technique.
Crafted by blending traditional craftsmanship with modern technology,
they undergo 150 days of double fermentation with zero preservatives,
using only millet peppers, salt and garlic.
The duck feet are cold-soaked in 9° rice vinegar at 0–6°C for 48 hours,
then blended with chopped chili to create an unforgettable Hakka taste.
