Acacia Honey is water-white or slightly yellow. The honey liquid is clear and transparent, with a delicate fragrance resembling that of sophora flowers. It tastes fresh and pure, with a cooling nature, sweet but not cloying. It hardly crystallizes or does not crystallize at all; if it does crystallize, it appears as fine granules or in a grease-like texture, and it is more transparent than other single-flower kinds of honey. There is often a light foam on the surface when in liquid state.
