Jujube honey is amber and dark in color. Depending on the variety, the honey liquid is either transparent or slightly turbid with a lustrous sheen. It has a strong, distinctive aroma (the fragrance of jujube blossoms). The taste is rich and cloyingly sweet with high sweetness, slightly irritating the throat, and has a heavy aftertaste. It is thick in texture and does not crystallize easily; when crystallized, it appears coarse-grained.
